Mills' Sweet Potato Pie
This recipe was given to me by my father.

1 -10 inch Pie Shell
2 1/2 cups of mashed sweet potatoes
8 tablespoons (1 stick) butter, softened
1 3/4 cups of sugar
1 teaspoon of ground nutmeg
1 teaspoon of vanilla extract
2 large eggs
1 - 7 ounce can of evaporated milk 

Make the pie shell or use a store bought one. Preheat the oven to 300ºF. Beat the sweet potatoes and butter with a mixer until smooth. Add the sugar, nutmeg, and vanilla and continue beating until incorporated. Add the eggs, one at a time, beating well after each egg. Add the milk slowly, beating continuously. Transfer the filling to the cool pie shell and smooth the top with a spoon. Bake until the pie is set in the center and lightly browned, my father leaves his in for about 40 minutes. * Note, if you make this one, be sure to send me a slice!
