Mix the first 4 ingredients. With your hands, mix the next 3 ingredients. Pour about one third of the molasses mixture into the pastry lined pie pan. Sprinkle with one third of the flour mixture. Continue alternating layers, ending with the flour mixture. Bake in a preheated oven at 375ºF. for 35 minutes. Serve warm or cold. Makes 8 servings Pennsylvania Dutch Shoofly Pie Two 8 inch pastry shells, unbaked 2 cups of flour 1 cup of sugar 1 teaspoon of baking powder 1 stick of butter or margarine 1 cup of dark molasses 1 teaspoon of baking soda 1 cup of boiling water A pinch of salt 1 egg, beaten Sift together the flour, sugar, and baking powder. Cut in the butter. In a separate bowl, mix the molasses, baking soda, and water. Stir in the salt, egg, and 2 cups of the flour butter mixture. Pour into prepared pie shells and sprinkle with the remaining crumbs. Bake at 375ºF. for 45 minutes. |
