| Zucchini Casserole
1 1/2 pounds of zucchini, thinly sliced 2 cups of stewed tomatoes 1 teaspoon of salt 2 cups shredded Mozzarella cheese
Combine zucchini and salt in 1 1/2 quart casserole dish. Cover and place in microwave oven and cook for 7 minutes, stirring once. Remove half of zucchini from casserole dish. Layer half of tomatoes and cheese on top of the zucchini. Repeat layers. Cover. Return dish to microwave oven and cook until cheese is melted, 3 to 5 minutes. Serves 4 to 6. v |
