Place the butter in a mixing bowl and beat until creamy. Add the 1/4 cup of powdered sugar and the vanilla and beat for 30 seconds. Fold in the flour and walnuts. Shape 2 tablespoons of the dough into a flat patty. Place on a greased baking sheet. Repeat with the remaining dough and chill for 30 minutes. Preheat your oven to 400ºF. Bake for 8 to 10 minutes. Remove the cookies from the baking sheet and while the cookies are still warm, dip them in powdered sugar. Set aside to cool before serving. Makes 24 cookies |
