Place all ingredients except the chicken into a food blender and blend until smooth. Place the oil into a sauté pan. Heat and lightly brown the chicken thighs. Add the blended ingredients and simmer for 15-20 minutes until creamy in consistency and the chicken is cooked (no pink juices). Serve alongside stir fry vegetables, salsa and corn chips.
