1 medium chicken, cut into 6 pieces 1/3 cup of cooking oil 1 1/2 cup of onion, chopped 1 clove garlic, crushed Salt & pepper to taste One 3 ounces of canned tomato paste 3/4 cup of sauterne 1/4 cup of raisins 1/2 cup of peas 1/2 cup of carrots, diced 6 yellow potatoes, boiled |
| In a medium pot brown chicken pieces in cooking oil, then remove. Sauté onions and garlic. Add tomato paste, sauterne, salt, pepper, raisins, peas and carrots; mix well. Place chicken pieces on top, cover and simmer for 15 minutes or until meat is done. Add boiled potatoes. Serve with rice. Serves 6. Back to Mexican recipes |
