| Pollo Con Queso
1 chicken 1 cup of sour cream 2 cans of condensed cream of chicken soup 1 1/2 cup of grated Swiss cheese 1 package of flour tortillas 1 tablespoon of cumin 1/4 teaspoon of pepper 1/2 teaspoon of salt 1 cup of cooked rice 1 cup of milk |
| Boil the chicken. Then separate the meat from the bone. Leave the meat in chunks; add cooked rice. Set aside. In saucepan, combine the soup, sour cream, cheese, milk, and spices. Cook until hot. Add small amount to chicken mixture to moisten. Lay 1 tortilla in 9 inch pan. Spread 1/3 meat mixture on top. Add another tortilla on top. Continue to layer with meat until gone, ending with tortilla. Pour remaining sauce over top. Sprinkle small amount shredded Swiss cheese on top. Bake at 350ºF. for 30 to 40 minutes.
