Cook the shrimp in boiling water for about 15 minutes, then drain. Save some whole shrimp for the garnish and place the rest in a food processor with the breadcrumbs. Process to a coarse paste. Whisk the egg whites until stiff. In a separate bowl, beat the egg yolks until they are pale. Blend the yolks with the whites, then add the shrimp mixture. Heat the oil in a frying pan, and fry the shrimp patter, 1 tablespoon at a time, on medium heat until golden. Drain on absorbent paper towels, and add to any hot boiling salsa just before serving.
