Preheat your oven to 425ºF. Line a baking sheet with foil. Scrub the sweet potatoes or yams and pierce in several places with a sharp knife. Place on the baking sheet and bake for 45 minutes to 1 1/2 hours, depending on the size of the sweet potatoes, until they are thoroughly soft and a sweet sugary syrup is beginning to ooze onto the foil. Remove the potatoes from the oven and peel when cool enough to handle. Mash with a fork or potato masher or puree in a food processor along with the lime juice, honey, butter and salt. Serve at once or transfer to a lightly buttered baking dish and heat through for 20 minutes in a 350ºF. oven. Back to Mexican Recipes |
