Minguichi - Fried Cheese in Cream

1 1/2 tablespoons of unsalted butter or safflower oil
1/4 pound of queso anejo or Romano cheese, cut into 1/2 inch cubes
3 chilies Serrano's, finely chopped, optional
2 cups of thick crème fraiche

Heat the butter in a sauté or frying pan, add the cheese cubes, and fry, gently turning them over from time to time, until they are a rich golden color, about 2 minutes, adding the optional fresh chilies halfway through the cooking time. Add the cream and cook over moderate heat, stirring almost constantly, until it thickens. Serve with corn tortillas or as mentioned above. Serves 4 - 6
