| Black Bean Burritos (3.5 Pts)
Sauce one 16 ounce can of tomatoes, drained 1/4 cup of onions, minced 1 Can mild chopped green chilies or chopped ; 4 oz. jalapenos Burritos 2 cups of cooked black beans 8 fat-free flour tortillas 1/2 cup of onions, finely chopped 1 cup of fat-free cheddar cheese, grated and divided 1 avocado, diced optional |

Preheat oven to 350°F. Grease a baking sheet. For Sauce: Puree tomatoes, onions and green chilies in a blender. Set aside. For Burritos: Spread 1/4 cup black beans down the center of each tortilla. Sprinkle onions and 3/4 cup cheese over top of beans. Wrap tortillas around the filling. Place seam side down in prepared baking dish. Spoon sauce over top. Sprinkle remaining cheese on top. Bake for 15 minutes, or until cheese is melted. Sprinkle avocado over tortillas.
