| Melt the butter in a skillet over medium heat. Add the tomato, onion and basil. Season well and cook for 20 minutes. Stir occasionally. Dredge the liver in flour. Melt the remaining butter in frying pan over low heat. Cook the liver for 3 minutes, turn over. Season and cook for 2 minutes. Serve with tomato and onions. Serves 4 |
