| | Gingered Flank Steak 1 1/2 pound of lean beef flank steak 1/3 cup of lemon juice 2 tablespoons of honey 1 tablespoon of low sodium soy sauce 2 teaspoons of grated gingerroot or 1 teaspoon of ground ginger 2 cloves garlic, crushed |
| Trim the fat from the beef steak. Cut both sides of beef into a diamond pattern 1/8 inch deep. Place it in a shallow glass or plastic dish. Mix the remaining ingredients, pour over the beef. Cover and refrigerate for at least 8 hours, turning occasionally. Remove the beef from the marinade, reserve the marinade. Spray the broiler pan rack with nonstick cooking spray. Place the beef on a rack in broiler pan. Broil with the top 3 inches from the heat for 12 to 14 minutes, turning once and brushing frequently with marinade, until the desired doneness. Slice the beef diagonally across grain into thin slices. Makes 4 servings |
