Beef Paillard

1 pound of lean beef boneless sirloin steak
1/4 teaspoon of salt
1/4 teaspoon of cracked black pepper
2 teaspoons of vegetable oil
1 tablespoon of lemon juice
2 tablespoons of chopped fresh parsley

 

Trim the fat from the bee steak. Cut the beef into 4 pieces. Flatten each piece of beef to 1/4 inch thickness between waxed paper or plastic wrap. Sprinkle with salt and pepper. Heat 1 teaspoon of oil in a 10 inch nonstick skillet over medium high heat. Add 2 pieces of beef. Cook for 1 minute, and turn. Sprinkle with half of the lemon juice. Cook for about 1 minute longer or until desired doneness. Add the remaining 1 teaspoon  of oil to the skillet. Repeat with the remaining 2 pieces of beef and lemon juice. Sprinkle with parsley. Makes 4 servings
