No Knead Challah

2 1/2 packages of dry yeast
2 1/2 cups of lukewarm water
10 cups of flour
10 tablespoons of sugar
10 tablespoons of oil
2 tablespoons of salt
6 eggs

Mix the water and yeast in a small bowl. Put aside. In a large metal bowl, combine the flour sugar, oil, salt and eggs. Add the yeast and water. Mix together with a wooden spoon. When it gets difficult use your hands, but do not knead. Sprinkle a little flour on top of the dough, cover with a towel, and let it rise in a warm place for about 3 hours. Flour bottom of 2 large pans, do not grease. Take off challah. Braid challahs and brush egg on top. Let it rise in pan for 20 to 30 minutes. Bake at 325ºF.  for 50 - 60 minutes.
