4 large potatoes, pared 1 teaspoon of salt 1 small onion 1/8 teaspoon of pepper 2 eggs 1/4 teaspoon of baking powder 1/2 cup of flour Shortening or oil for frying |

Grate potatoes and onions into mixing bowl. Drain off excess liquid. Add eggs and beat until well-blended. Mix and sift together, Flour, salt, pepper and baking powder.. Stir into potatoes mixing well Heat enough shortening or oil in a heavy skillet, to a depth of 1 inch. When hot (375ºF. ) drop the batter by tablespoons into fat. Fry on both sides over medium heat until golden crisp and fluffy - drain. Serve hot with applesauce, or for dairy meals with sour cream. Makes approx. 1 1/2 dozen cakes |
