Hanukkah Latkes

2 pounds of potatoes
1 large carrot
1 onion
2 large eggs
1/4 cup of flour
1/4 teaspoon of salt
1/4 teaspoon of baking powder

Grate potatoes, carrot and onion. Boil potatoes and carrot until done. Drain and blot dry with paper towels. When completely dry, add onion. In separate bowl, beat eggs. Add potatoes, carrot and onion; beat together. Add flour, salt and baking powder. Mix all ingredients together well. Heat 3 tablespoons of oil to fry. Drop potato mixture by heaping teaspoonfuls. With back of spoon, flatten. Do not crowd. Cook 3 minutes on high heat, until golden brown. Serve with applesauce.
