
| Cheese Latkes
1 cup of ricotta cheese 4 eggs 2/3 cup of flour 2 tablespoons of margarine or oil for frying Cinnamon and sugar |

Mix cheese and eggs well. Add flour and mix again. Heat oil or margarine in a frying pan over medium heat. Carefully spoon the batter by the tablespoonful into the pan. Fry on one side until pancakes bubble. Turn and fry on second side until brown. Drain on paper towel. Sprinkle with cinnamon and sugar. Serve warm. Serves 3 to 4.
Cheese Latkes 2
1/2 pound of Cottage cheese 3 eggs 3 tablespoons of Matzo meal or wheat bran 1/2 teaspoon of salt 2 tablespoons of sugar, optional
Mix all ingredients together until smooth. Spray a non-stick griddle or skillet with vegetable cooking spray. Drop batter by large spoonfuls onto hot griddle. Cook till browned on bottom; turn over and cook the other side. |
