Challah 4

1 tablespoon  of sugar
1/2 cup of warm water
1 1/2 ounces  of yeast
3 eggs
3/4 cup of sugar
1/4 cup of oil
1/4 cup of wheat germ
2 cups of hot water
12 cups of flour + 1/2 cup of whole-wheat flour
1 tablespoon of salt
Glaze:
1 beaten egg
Poppy Seeds

 

 In large bowl dissolve sugar in 1/2 cup warm water. Crumble yeast into this and let stand until foams. Add eggs and mix. Add sugar, oil and wheat germ and mix. Slowly add hot water, flours and salt, alternating. When you can, knead until smooth. Place in oiled bowl and let rise 30-45 minutes until doubled. Punch down and let rise again till doubled. Punch down. Divide into 4 parts and shape loaves. Place in greased pans and let rise 15 minutes. Preheat oven to 400ºF.  Glaze and sprinkle. Bake 400ºF.  5-10 minutes, then lower temp to 350ºF.  and bake 35-40 minutes. Makes 4 loaves
