Challah Bread 3

2 1/2 cups of warm water
2 packages of yeast
1/2 cup of honey
1 teaspoon of salt
3 eggs
1/2 cup of oil
Approximately 10 c. flour

The water should be warm to the touch. Pour into large (at least 6 quart mixing bowl). Add yeast and honey and stir to dissolve. Let it stand 10 minutes. Mix the eggs, salt and oil. Add to yeast mixture. Gradually add flour, mixing with spoon or spatula. When no more flour can be added with spoon, knead in flour by hand to form a smooth, non sticky dough. Let rise for 1 1/2 hours. Punch down and shape. Let rise 45 minutes, then bake 40 minutes at 350ºF.
