Challah Bread 1

1 package of dry yeast
5 cups of flour (approx.)
1 teaspoon of salt
1/3 cup of sugar
1 1/4 cup of warm water
1/3 cup of oil
2 eggs
Optional: 1 egg yolk with 1 tablespoon of milk (beat well)
Optional: Poppy or sesame seeds

Combine all dry ingredients in a large bowl using about 1/2 the flour. Add water, oil and eggs. Beat well, removing most lumps. Add additional flour to make firm dough. Knead 8 to 10 minutes. Place in oiled bowl, oiling top of dough and cover. Let rise until doubled, about 1 hour. Punch dough down, form loaves (2) by rolling or braiding as you choose. Cover loaves and let rise until doubled (about 45 minutes). If desired, brush loaves with egg yolk mixture and sprinkle with seeds. Bake at 350ºF. for 35 minutes or until golden brown.
