Blintz Soufflé

1 dozen frozen blintzes (any kind)
1/4 pound of margarine
3/4 cup of sugar
2 1/4 cups of sour cream
1 1/2 tablespoon of vanilla
6 eggs
Cinnamon

Melt the margarine in the bottom of a large rectangular dish. Lay blintzes in a single layer on the bottom and sprinkle with cinnamon. Beat eggs vigorously and slowly add sugar, sour cream and vanilla. Pour over blintzes. Bake at 350ºF. for 50 minutes. Serve with fresh fruit salad if desired, or try warming up some blueberry or apple pie filling.
