Three Cheese & Chicken Ravioli

For the filling:

4 ounces of goats cheese
4 ounces of blue cheese
4 ounces of pecorino or parmesan cheese
2 chicken breasts (fully cooked & diced small)
2 egg yolks
1 cup bread crumbs
2 tablespoons of chopped garlic
2 tablespoons of chopped olives
2 tablespoons of extra virgin olive oil
fresh ground pepper

Blend all ingredients until evenly mixed. For the assembly: 1 pack large egg roll wrappers, 2 egg whites, lightly beaten Brush 1 sheet of pasta with egg whites. Spoon approximately 4 tablespoons of of filling in center. Place another sheet of pasta on top and press together evenly, pushing all air out. Repeat until filling is gone. Drop ravioli in boiling salted water for approximately 3 minutes. Drain and serve. Serves 6 Courtesy of: The Squires
