Cook the rice mix according to the package directions and set aside. Melt the butter in a Dutch oven over medium high heat. Add the onion, and cook until tender, stirring often. Stir in the rice, sour cream and the next 5 ingredients. Spoon the mixture into a greased 13 x 9 x 2 inch baking dish. Sprinkle with mozzarella cheese and Parmesan cheeses, top with breadcrumbs. Bake at 350ºF. for 20 to 25 minutes or until the cheese is bubbly and lightly browned. Makes 12 servings |
