

| Gelato di Fichi Fig Ice Cream1 pound of fresh, ripe figs 2/3 cup of granulated sugar 2/3 cup of water 2/3 cup of milk Peel the figs and place them in a food processor or blender together with the sugar. Puree to a creamy consistency. Add the water and milk and process a few more minutes. Transfer to an ice cream maker and freeze according to the manufacturer's instructions. |

Variation with unpeeled figs 1 pound of figs 2/3 cup of granulated sugar 2/3 cup of water 1 cup of milk Wash the figs, remove the protruding stem, but do not peel them.
