-= Instructions =- From: elayne@usa.pipeline.com (Elayne Cohen) Date: Wed, 17 Jul 1996 22:09:07 GMT Melt butter in large saucepan, add egg noodles, and cook until browned. Add rice, stir to coat with butter. Cook on medium high heat for 1 minute. Add chicken stock, and optional basil, and stir to mix. Reduce heat, cover, and cook for 25 - 30 minutes until rice is done. -= Ingredients =- 1 tablespoon of unsalted margarine 1/3 cup of uncooked thin egg noodles 1/2 cup of uncooked long-grain rice 1 1/4 cups of Low-sodium chicken broth 1/8 teaspoon of black pepper
-= Instructions =- This version is from "Great Recipes for Good Health" by Readers Digest, who just calls it "Noodles and Rice." In a medium-sized saucepan melt the butter or margarine. When bubbly, add the egg noodles and stir until browned, about 2 minutes. Add the rice and cook about 3 more minutes. Add the chicken stock/broth and spice and bring to a boil. Reduce to a simmer and cover. Cook for 20-30 minutes until rice is done, stirring occasionally. Allow to sit for a few minutes before serving.
