3/4 cup of homemade mayonnaise or a good store bought brand
1/2 tablespoon of prepared horseradish, drained
1/4 cup of finely chopped cold cooked beets
1/2 teaspoon of grated onion
1/2 teaspoon of Worcestershire sauce
1/2 tablespoon of caviar, optional

Mix the mayonnaise, horseradish, and beets until light pink. Add the onion and Worcestershire sauce and mix thoroughly. Fold in the caviar gently. Refrigerate for at least 1 hour. Makes 1 cup
