Put the bell pepper, onion, tomatoes, red pepper flakes, and salt in a blender and pulse until coarsely chopped. In a heavy frying pan, heat the oil, until it is hot but not smoking and sauté the mixture until the pepper is tender and the onion is golden brown. Simmer uncovered over low heat for 10 minutes, stirring occasionally. Makes 1 cup |
