| Creamy Vinaigrette
1 egg white 1/8 teaspoon of Dijon mustard 2 tablespoons of fresh lemon juice 1/3 teaspoon of salt 1/2 cup of olive oil
In a blender or food processor, combine egg white, mustard, lemon juice and salt. With machine running, add olive oil, 1 tablespoon at a time. Makes 1/2 cup. |
