Preheat your oven to 375ºF. Prepare a cookie sheet with nonstick cooking spray. Using a food processor fitted with a steel blade, combine all of the ingredients except the egg white. Flatten the dough slightly, cover in plastic wrap. Chill for 30 minutes. Break off a tablespoon of dough, roll out to form a 3 inch pencil shaped rope. Attach the edges to shape a ring. Place on a prepared cookie sheet. Continue with the remaining dough. Brush the tops of the cookies with lightly beaten egg white. Bake for 10 to 12 minutes or until lightly golden. Remove the cookies from the baking sheet and cool on a wire rack. Store in a airtight covered tin.
