3 eggs beaten or 3/4 c. egg substitute 2 cups of sugar 1 cup of vegetable oil 4 tablespoons of unsweetened cocoa 1 teaspoon of vanilla 2 cups of grated zucchini 3 cups of flour 1 teaspoon of salt 1 teaspoon of baking soda 1 teaspoon of cinnamon 1/4 teaspoon of baking powder
Mix beaten eggs, or egg substitute, sugar, oil and cocoa. Add vanilla and zucchini and mix. Sift remaining dry ingredients and add to zucchini mixture and mix well. Lightly grease 2 loaf pans. Pour bread batter into pans. Bake at 350ºF. for 50-60 minutes. Makes 2 loaves. Tastes great with cream cheese icing!
