One 15 ounce container part skim ricotta cheese
2/3 cup of confectioners' sugar
1/2 teaspoon of grated orange peel
1/2 teaspoon of vanilla extract
2 tablespoons of miniature semi-sweet chocolate chips
10 sugar ice cream cones

In a large bowl with electric mixer at low, beat ricotta cheese, sugar, orange peel, and vanilla just until smooth. Stir in chocolate chips. Cover and refrigerate 30 minutes. To serve: Spoon mixture directly into ice cream cones. |
