Easy Peanut Brittle
1 cup of Karo pancake syrup 1 cup of sugar 1/2 cup of water 2 tablespoons of butter or margarine 1 1/2 cup of salted peanuts 1 teaspoon of baking soda |

Grease large baking sheet. In a 3-quart saucepan stir first 4 ingredients. Stir constantly over medium heat until sugar dissolves and mixture boils. Cook without stirring until temperature reaches 280ºF. (soft crack). Gradually stir in nuts; cook and stir until temperature reaches 300ºF. (hard crack). Remove; stir in soda. Spread quickly on baking sheet. Cool. Makes 1 1/2 pounds. |
