3 eggs 1 cup of sugar 1/2 cup of sweetened applesauce 1 cup of sifted flour 1/2 teaspoon of baking powder 1/2 teaspoon of cinnamon 1/4 teaspoon of baking soda 1/4 teaspoon of salt 1/4 teaspoon of ground cloves 1/2 cup of raisins 1/2 cup of confectioners' sugar two 3 ounce packages of cream cheese, softened 1 tablespoon of grated orange rind
Preheat oven to 375°F. Line the bottom of a 10 x 15 x 1 inch pan with waxed paper. Grease waxed paper and sides of pan. beat the eggs in a bowl until very thick and lemon colored. Gradually beat in 3/4 cup of sugar. Add applesauce. Sift the flour, baking powder, cinnamon, baking soda, salt, and cloves together into separate bowl. Fold flour mixture gently into egg mixture. Stir in raisins.
Pour the batter into prepared pan, bake for 20 - 25 minutes. Turn cake out onto brown paper that has been dusted with about 1/4 cup of confectioners' sugar. Peel off waxed paper; trim off any hard edges from cake. Roll up like a jelly roll in the paper; set aside to cool. Blend the cream cheese, milk, orange rind, and remaining 1/4 cup of sugar together in a bowl. Unroll cake, spread cheese mixture on cake, then re-roll, discarding paper. Sprinkle top of cake with remaining confectioners' sugar.
