| Cajun Casserole
1 pound of Owens Hot Sausage
1 pound of ground meat
1 medium cabbage
1 can of Ro-Tel tomatoes
1 cup of long grain rice
Onions to taste
Bell pepper to taste
Celery to taste
Garlic to taste
Salt and pepper to taste |

Cut the cabbage into cubes. Brown the meat, and add the seasonings and cook a few minutes. Add Ro-Tel tomatoes, 1/4 cup water and raw rice. Cook for 5 minutes. Add cabbage cubes and cook 5 more minutes.
In another pot make sauce:
1 tablespoon of flour
1 cup of milk
8 slices of American cheese
Dissolve the flour in milk and then add butter and cheese. Cook until sauce is smooth. Add this sauce to cabbage mixture. Bake 1 1/2 hours at 350ºF. in a covered casserole dish. You will need a large casserole dish. Serves 6-8 people |
