Pecan Muffins

2 cups of all purpose flour, sifted
3 teaspoons of baking powder
1 cup of sugar
1/2 teaspoon of salt
1 large egg, lightly beaten
1 cup of milk
1 cup of melted butter
1 cup of chopped pecans 

Preheat your oven to 400ºF. Sift the flour, then sift again with the baking powder, sugar and salt. Repeat and sift again. Add the lightly beaten egg, milk and butter. Stir until moist, remember your batter SHOULD NOT BE SMOOTH. Stir in the chopped pecans. Spoon the batter into a well greased muffin cups, filling them 2/3 full. Bake for 20 to 25 minutes or until golden brown. Finally, hide them from the kids! Makes 12 muffins
