| | Oatmeal Raisin Scones 1 cup of all purpose flour 3 tablespoons of brown sugar 1 1/2 teaspoons of baking powder 1/2 teaspoon of ground cinnamon 1/4 cup of milk 1/3 cup of margarine or butter 1 cup of quick cooking rolled oats 1/2 cup of raisins, coarsely chopped, currants or miniature semisweet chocolate pieces 1 beaten egg some additional milk for brushing | |
Preheat oven to 400ºF. In a large bowl combine the flour, sugar, baking powder, and cinnamon. Cut margarine into slices and add to mixture; the mixture will resemble coarse crumbs. Stir in oats and raisins, currants, or chocolate pieces. Combine egg and 1/4 milk and add to mixture. Stir till just moistened (it will be sticky). Pat dough into a 7" circle on a lightly floured surface. Cut into 12 wedges and place the wedges on a baking sheet. Brush with milk. Bake in a 400ºF. oven for 10 to 12 minutes, or till light brown. Serve warm. Serves 12 |
