Combine all of the dry ingredients. Knead the dough on a floured surface until it has a good spring to it. Cover the bowl and let it stand at room temperature for about 30 minutes. On a lightly floured surface, roll out the dough very thin. Cut into saucer sized pancakes about 6 inches in diameter. Fry in a 1/2 inch of very hot clarified butter or oil until the pooris is a light colored brown. Drain on paper towels and continue until all are cooked. Pooris may be served hot or cold. To keep them warm while the remainder of the batch is fried, place them on paper towels in a baking dish in a 250ºF. oven. |
