Combine the corn meal and salt in a mixing bowl. Stir in the boiling water until smooth. Let it stand for a few minutes, then mix in the cold milk. Add one egg at a time, beating hard after each. Stir in the melted butter. Butter a medium sized earthenware or glass dish. Pour the batter into the baking dish and bake for 30 minutes at 425ºF. Serve hot with butter. Makes 1 medium sized dish, serves 6 to 8. |
