| Gluten Oatmeal Bread
2 tablespoons of dried yeast 2 1/4 cup of water 1/2 cup of molasses 2 cups of oatmeal 1 tablespoon of oil 1/2 cup of dry milk 1/2 cup of soy flour 1/2 cup of wheat germ 1 teaspoon of sea salt 1/2 cup of gluten flour 7 cups of unbleached flour | |
Soften the yeast in 1/4 cup warm water with molasses. Heat remaining 2 cups water to boiling point and pour over the oatmeal. Allow to cool to lukewarm. When yeast bubbles, combine with oatmeal. Add the remaining ingredients, using enough unbleached flour to make moderately stiff dough. Knead until smooth and elastic. Place in greased bowl and cover. Sit in warm place until doubled. Punch down and shape into 2 loaves and place in greased pans. Cover with damp cloth and allow to rise again. Bake at 350ºF. for 55 to 60 minutes. |
