Preheat your oven to 350ºF. Melt the shortening in a 1 quart casserole dish in oven. In a saucepan, scald 1 cup of milk, stir in the cornmeal. Cook until thick. Remove from the stove and cool slightly. Beat in the remaining ingredients. Pour the melted shortening into the mixture in a saucepan. Now pour the whole preparation back into the casserole dish. Bake at 350ºF. for 1 hour. Makes 4 servings |
