
| Black Bean Salad
2 cans of black beans (Goya) 2 ribs of diced celery 4 green onions, finely sliced If available, yellow, green & red bell pepper, diced, about 1/4 cup of each 1 can of giblet corn Cilantro to taste 2 tablespoons of olive oil Apple cider vinegar |

Mix all ingredients. Let marinate 3 to 4 hours at least. Adjust seasonings to taste. More vinegar may be necessary as beans absorb vinegar during marinate process. Garnish with lime wedge and extra cilantro. |
