| String Beans Vinaigrette
1 pound of green beans, washed, ends snipped off & cut in half on the diagonal 1/2 medium onion, chopped fine 1 small clove garlic, chopped fine 1/2 cup of blue cheese, crumbled 1/3 cup of grated Parmesan cheese 6 tablespoons of olive oil 2 tablespoons of balsamic vinegar 1/2 teaspoon of salt Freshly ground pepper |

Fill a large saucepan with water and bring to a boil. Add salt to taste and the beans. Cook until tender but still firm, about 3 minutes. Drain and set aside. Place the beans in a bowl with the remaining ingredients. Mix well and chill. Yield: about 4 servings. |
