3 eggs 1 1/2 cups of sugar 1/2 teaspoon of vanilla 1 cup of oil 2 cups of flour 1 teaspoon of cinnamon A dash of nutmeg 1 teaspoon of baking soda 4 to 6 apples, peeled & cut up 1/2 cup of nuts (opt.) |

Beat the eggs for 1 minute. Add the sugar, vanilla and oil. Then add all the remainder of the dry ingredients. Fold in the apples and nuts and put in "lined" muffin tins. Bake at 350ºF. for 30 to 35 minutes. |
