AUSTRIAN APPLE CAKE

1 stick of butter or margarine
2/3 cup of sugar
3 eggs
2 teaspoons of lemon extract
2 cups of flour
2 teaspoons of baking powder
4 tablespoons of milk
White powdered sugar (optional)
Approximately 4 peeled and sliced apples*

*Apples may be substituted with almost any fruit of your choice. Peaches, cherries, strawberries are all wonderful in this cake. Mix all ingredients except apples with mixer. Then fold in peeled and sliced apples. Bake at 325ºF. for 1 hour in 8x8 inch pan, greased or sprayed with non-stick spray. After cooling, sprinkle powdered sugar on top.
