Codfish Balls

4 ounces of salt cod
1 1/2 cups of chopped, peeled potatoes
1/4 cup of chopped onion
1 egg
2 tablespoons of grated Parmesan cheese
2 tablespoons of snipped parsley
1 tablespoon of margarine or butter
Shortening or cooking oil for deep fat frying

Soak the cod in water to cover for 4 to 24 hours, change the water often. Drain, and cut into small pieces. Cook the cod, potatoes, and onion in boiling water about 10 minutes or until tender, drain. Beat the mixture until combined. Beat in the egg, cheese, parsley, margarine, and 1/4 teaspoon of pepper. In a heavy saucepan or deep fryer heat 2 inches of melted shortening or oil to 375º F. Drop the cod mixture by heaping tablespoons, a few at a time, into the hot fat. Fry about 2 minutes or until golden. Drain on paper towels. Serve with tartar or cocktail sauce, if desired. Makes 15
