African Vegetable Rice
2 cups of long grain rice 3 cups of water 2 tablespoons of salt 1/4 cup of margarine 1 medium onion, finely chopped 2 large tomatoes, peeled & chopped 2 stalks of celery, chopped 4 ounces of chopped broccoli 4 ounces of chopped mushrooms 1/4 teaspoon of cayenne pepper |
Instructions:
Cook the rice in salted water; set aside. In a frying pan melt margarine, add onions and fry about 5 minutes until translucent but not brown. Add the tomatoes, red pepper, celery and broccoli. Add mushrooms and fry another 3 minutes. Season with remaining salt and cayenne. Add rice; mix well. Cook for another 10 minutes or until heated thoroughly.
