1 package (6.1 ounces) Of Rice A Roni® Fried Rice 1/2 cup of regular chicken broth 2 tablespoons of creamy peanut butter 1 tablespoon of regular soy sauce 1 tablespoon of vegetable oil 3/4 pound of skinless boneless chicken breasts, cut into 1/2inch pieces 2 cloves garlic, minced 2 cups of frozen mixed carrots, broccoli, and red pepper vegetable medley, thawed, drained 2 tablespoons of chopped peanuts
Prepare Rice a Roni® mix as package directs. While Rice-A-Roni® is simmering, combine the chicken broth, peanut butter and soy sauce, mix with fork. Set aside. In a second large skillet or wok, heat oil over medium high heat. Stir fry chicken and garlic for 2 minutes. Add the vegetables and broth mixture, stir fry for 5 - 7 minutes or until the sauce has thickened. Serve over rice. Sprinkle with peanuts, if desired. Makes 4 servings
