| Passover Vegetable Loaf
3 tablespoons of butter or margarine 1 medium chopped onion, optional 1 1/2 cup of grated carrots 3 eggs 3/4 cup of matzoh meal 1/2 cup of chopped green pepper 1/2 cup of chopped celery One 10 ounce package of frozen chopped spinach 1 1/2 teaspoon of salt 1/8 teaspoon of pepper |

Cook spinach and drain. Sauté pepper, onion, celery and carrots about 10 minutes in butter or margarine. *If you omit the onion, it comes out sweeter. Combine spinach with sautéed vegetables. Add eggs, salt, pepper, and matzoh meal. Bake in greased loaf pan Pyrex at 350ºF. for one hour. |
