Passover Sponge Cake

8 eggs
1 1/2 cup of  sugar
1 teaspoon of  salt
1 cup of  potato starch, sifted
1 tablespoon of  cooking oil (Mazola)
Juice and grated rind of 1/2 lemon and 1/2 orange or 1 whole orange (separate rind and juice)

Mix orange and lemon rind with 2 tablespoons sugar; set aside and prepare other ingredients. Beat egg whites and salt on high until soft peaks form. Add sugar gradually. In separate bowl with hand mixer beat egg yolks until light and frothy (3 minutes). Add rind and sugar to yolks while beating. Next, add to egg whites on high and then add juice. Reduce speed to low and add potato starch 1/4 cup at a time. Add oil and mix. Pour into 10-inch tube pan and bake 50 minutes. When done, invert pan over a jar or bottle to cool 1 1/2 hours before removing from pan. Serve with fresh strawberries and Cool Whip.  The person that submitted this recipe did not include the oven temp.
